Root vegetable soup

You must try this soup! Especially with mascarpone cheese inside... it change everything! It taste amazingly...!!!

















"Root vegetable soup"

- 2 big carrots, chopped
- 2 potatos, chopped
- 1 onion, chopped
- 1 white celery, chopped
- 1 large parsnip, chopped
- 3-4 spoon of oil
- 1 cup of milk
- small piece of ginger root, grated
- 4 tbsp mascarpone cheese
- salt and pepper

Heat oil in a big saucepan. Put chopped vegetables and fry lightly, then cover and sweat them on a low heat for 5-7 min. Pour in the water, just to cover them, add salt, pepper and ginger. Cover and simmer for 20 min, add milk and wait another 3-5 min.
Mix everything with a food processor.
Serve in a bowl garnished with mascarpone cheese.
