Sweet &sour aubergine
- 1 big aubergine
- salt
- pepper
- 1 onion
- 1 zucchini
- 1/2 fennel bulb, trimmed
- 70 ml red wine vinegar
- 2 big ripe tomatoes
- a few of basil leaves
Cut aubergine into small pieces, sprinkle with salt and leave for 15min. Cut onion into 0,5 cm dice.
Heat olive in a frying pan, add the onion until soft. Add the fennel cut-et into 1cm dice. Than add an aubergine. Cut tomatos and zucchini, add to the pan. Wait about 20 min, add vinegar and basil leaves. Season well.
