Butterfly cakes

Butterfly cakes
Probably I am starting to miss Spring...





















"Butterfly cakes"

- 150g soft butter
- 150g sugar
- 180g self raising flour
- 3 eggs, bitten
- a few drops valilla extract

For buttercream:

- 150g soft butter
- 250g icing sugar
- 1 tsp lemon juice



Preheat oven to 180 C. Stand 12 silicone cases on a baking tray.
Putt all the cake ingredients in a bowl and mix well. Divide the cake mixture between the cake cases.
Bake around 20 min until gold.

Cream: put the butter and sugar in a bowl and beat well with electric whisk until smooth, add the lemon juice in the end.

Cut out a round from the center top of each cake and cut them in half.

Put the buttercream into the cavity of each cake. Reposition the 2 halves of the rounds on each cake so they resemble butterfly wings.

Coffee Cookies

Coffee Cookies
What can I say? They are simple to prepare and tasty....



















"Coffee Cookies"

- 5 tbsp hot! milk
- 2 tbsp instant coffee
- 1 egg
- 225g flour
- 1 tsp baking powder
- 110g butter
- 110g brown sugar

Heat the oven to 170C.
Mix coffee with a hot milk.
Beat the butter and sugar, add an egg, flour and baking powder. Strain in the coffee and mix until blended.
Place spoonfuls of the cookies dough on a baking tray. Bake about 15 min.

Gluten free waffles

Gluten free breakfast waffles
My daughter's idea... but tasty. You can freeze for later use!






















"Gluten free breakfast waffles"


• 2 cups gluten free flour
• 1 Tablespoon sugar
• 1 Tablespoon baking powder
• 3 eggs, separated
• 2 cups milk
• 1/2 cup butter or margarine
• 1 teaspoon pure vanilla extract
• Maple syrup, golden syrup or fruit for serving



• Preheat your oven to 200 degrees.
• Combine the flour, sugar, and baking powder in a bowl.
• Beat the egg whites until stiff in a separate bowl or pot.
• Add the egg yolks, milk, butter and vanilla to the flour mix and whisk together.
• Gently fold the egg whites into the batter.
• Pour the batter into a silicon waffle mould. There should be enough batter for several moulds or several batches.
• Bake for 12 min or until golden.

Muffins with pears

Muffins with pears
Fall, fall... and so many possibilities of making tasty food. Like muffins with pears for a lazy afternoon.




















"Muffins with pears"

- 200g white flour
- 2 tsp baking powder
- pint of salt
- 70g custar sugar
- 3/4 cup jus / orange, mango.../
- 2 eggs
- 50ml olive oil
- a few drops vanilla extract
- 1-2 pears peeled, cut

Mix dry ingredients together. Add jus, eggs, olive and vanilla extract. With a big spoon stir just until the flour is moistened. Add pears.
Grease a 12-cup muffin tin and spoon the batter into them. Bake n a preheat oven 200stC for about 15-20 min.

Gluten free lemon cookies

Gluten free lemon cookies
My brave daughter baked them... yesterday. On a picture only two left!!



















"Gluten free lemon cookies"


125g butter
225g caster sugar
2 eggs (lightly beaten with a fork)
1 tsp vanilla extract
400g gluten free flour
1/2 tsp salt
1/2 tsp baking soda
Zest from 1 lemon
Juice from 1 lemon



Mix together butter and sugar. Add the lightly beaten egg and vanilla extract, flour, soda and salt. Add the lemon juice and zest.  Place cookie dough balls approximately the size of one tablespoon scoop on a tray lined with baking parchment, then bake for 8 -10 min or until golden brown.

Cookies for a rainy day

Cookies for a rainy day
Maybe not only for a rainy day... ? Today is Polish Independent Day so I put some national colors on a top ;)












"Cookies for a rainy day"

-130g flour
- 1 yolk
- 40g brown sugar
- 40g custar sugar
- 80g butter
- 1/4 tsp baking soda
- a few drops vanilla extract

For the contain:

- 150g dark chocolate
- 20g butter
- 1 tbsp sour cream

Cream a butter and two sugars then add an yolk and vanilla. Add the flour and soda.
Roll the dough into small balls and place well apart on the baking sheet.
Bake for about 15 min 180stC.
Cool well.
In the meantime melt the chocolate, butter and sour cream in a bowl placed over a pan with gently boiling water.
Smooth a teaspoon of this over a top of each cookies. Put some decoration on a top and put aside in a cool place.

"Cookies Melting Moments"

- 100g butter
- 100g coconut fat
- 100g custar sugar
- 1 egg
- 150g self-raising flour

Heat the oven to 180st C.

Mix together butter, coconut fat and sugar. Add an egg and flour.

Line a large baking tray with non-stick baking paper. Spoon the dough on a paper and bake for around 15-20 min.
