Broccoli and Cheddar soup

I love cheese on a top of a warm soup... I just love it :)



















"Broccoli and cheddar soup"

- 0,5 kg broccoli
- 1 small onion, chopped
- olive
- 1 potato, peeled and chopped
- salt, pepper
- 100 ml double cream
- 100g Cheddar, grated

Melt an olive in a large pan. Add onion, potato, broccoli cut into pieces and cook about 5 min stirring frequently. Add water or vegetable stock, salt and pepper and cook for another 20 min.
using a blender puree the mixture until smooth, add cream. season well. You may add a few drops of Tabasco.

Heat soup gently and serve the soup garnished with the grated cheese.
