American whisked sponge cake

My daughter's boyfriend loves Victoria Sponge cake. I can understand his fascination but personally I prefer not so heavy version: American whisked sponge cake.
















"American whisked sponge cake"

- 100g flour
- 100g sugar
-3 eggs
- vanilla extract
- 200 ml double cream
- 150g fresh strawberries

Preheat the oven to 180 C.

Whisk the egg whites and add egg yolks and sugar. Gently add flour and vanilla extract. Pour the mixture into one big/you must cut cake on two pieces later on/ or two small tins. Bake about 25-30 minutes. Leave to cool.

Whip the cream. Chop all but 2 strawberries. Sandwich the cake together with the whipped cream and chopped strawberries. Decorate with icing sugar and 2 left strawberries.
