"Spinach and coriander roulade"
- 1 kg fresh spinach
- 20g soft butter
- 4 eggs, separated
- 3tbsp sour cream
- 200g soft white cheese
- garlic/ 2 gloves/
- 2 tbsp chopped coriander
- salt, pepper
Boil in a large saucepan with a 2/3 glass of water spinach for a 5 min. Drain thoroughly and mix in food processor with 4 yolks. Season well.
Whisk the egg whites and fold them into the spinach mixture.
Grease well a tin. Spread spinach in the tin and and bake for 15 min in a preheated oven.
In a meantime prepare the filling. Place the cheese in a bowl and stirring in the cream and coriander and chopped garlic. Add salt and pepper.
Spread the filling on the roulade. Roll carefully.
Serve cut into slices.

Haddock with poached eggs
-2 spring onions, sliced
- 1 tbsp butter
--2 tbsp creme fraiche
- 4 smoked haddock fillets
- 200 ml milk
- 4 eggs
- salt, pepper
- 1 spoon vinegar
Boil the potatoes for 20 min until tender. Drain, crush, add spring onion, butter and cream. Keep warm.
Put milk in a large frying pan and add the fish. Boil slightly for 5 min.
In another pan boil the water with 1 spoon of vinegar, swirl the water with a spoon and crack in four eggs. Simmer for 3 min.
Serve the haddock on top of the potatoes topped with the egg.

Broccoli and Cheddar soup
I love cheese on a top of a warm soup... I just love it :)
"Broccoli and cheddar soup"
- 0,5 kg broccoli
- 1 small onion, chopped
- olive
- 1 potato, peeled and chopped
- salt, pepper
- 100 ml double cream
- 100g Cheddar, grated
Melt an olive in a large pan. Add onion, potato, broccoli cut into pieces and cook about 5 min stirring frequently. Add water or vegetable stock, salt and pepper and cook for another 20 min.
using a blender puree the mixture until smooth, add cream. season well. You may add a few drops of Tabasco.
Heat soup gently and serve the soup garnished with the grated cheese.

Stilton Welsh rarebit
My teenager boy likes only very simple, not very healthy food. I try to find new dishes with "secret vitamins" inside;)
"Stilton Welsh rarebit"
- 100g stilton cheese / or other blue one/
- 20g butter
- 1 egg yolk
- 2 spring onion sliced
- 2 spoons milk
- 2 slices of bread
- 2 slices of bacon
In a small pan heat the butter with the spring onions for a while, leave to cool and add cheese, a yolk and milk. Mix well.
Put the mixture on a bread and cook under a preheated hot grill for about 2-3 min.

Sweet & sour aubergine
I love aubergine..maybe it is because I am coming from the "potato land"... it means Poznan...Sweet &sour aubergine
- 1 big aubergine
- salt
- pepper
- 1 onion
- 1 zucchini
- 1/2 fennel bulb, trimmed
- 70 ml red wine vinegar
- 2 big ripe tomatoes
- a few of basil leaves
Cut aubergine into small pieces, sprinkle with salt and leave for 15min. Cut onion into 0,5 cm dice.
Heat olive in a frying pan, add the onion until soft. Add the fennel cut-et into 1cm dice. Than add an aubergine. Cut tomatos and zucchini, add to the pan. Wait about 20 min, add vinegar and basil leaves. Season well.

-30g sugar
- 5 dag butter
- 150ml milk
- 1 egg
- some currants
Put the butter and milk in a saucepan, heat gently. Add yeast with sugar. Put flour, prepared mixture and egg into a blander. Mix well.
Form into a ball, leave in a warm place until doubled in bulk. Knead currants into a mixture.
Divide into 12 pieces and form each into a need round.
Wait another 10-15 min.
Bake until golden in a warm oven.
Serve with butter and jam.

I prefer polish version of yeast cake... but this one is quite original. More flowery... Thanks to fruits?

-1 tsp cinnamon
- 75 g raisins
- 100g butter
- 100g sugar
- 1 tbsp golden syrup
- 1 egg
-1 cup warm milk
- 1 tbsp dried yeast
- 1/2 tbsp bicarbonate of soda
Beat together the butter, sugar, syrup and egg. Add flour, cinnamon, milk, yeast, soda. Mix well. Add raisins in the end.
Place in a greased loaf tin and leave in a warm place until doubled.
Put to the warm oven and bake about 45min-1 hour.
