Coffee Cookies

Coffee Cookies
What can I say? They are simple to prepare and tasty....



















"Coffee Cookies"

- 5 tbsp hot! milk
- 2 tbsp instant coffee
- 1 egg
- 225g flour
- 1 tsp baking powder
- 110g butter
- 110g brown sugar

Heat the oven to 170C.
Mix coffee with a hot milk.
Beat the butter and sugar, add an egg, flour and baking powder. Strain in the coffee and mix until blended.
Place spoonfuls of the cookies dough on a baking tray. Bake about 15 min.

Carrot, Tomato and Coconut soup

Carrot, Tomato and Coconut soup
For lazy people. Simple and tasty.





















"Carrot, Tomato and Coconut soup."

- 1 small onion, chopped
- 1 big garlic gloves, chopped
- 1 spoon olive oil
- 1 can tomatoes
- 1 can coconut milk
- salt, pepper

Heat oil in the pot and fry onion with garlic. Add some kurkuma if you like. Add carrots, tomatoes and cook for a while. Pour water into the pot to cover vegetables, add salt and pepper and cook for 20 min.
Pour coconut milk into the soup and use a blender to mix soup well until smooth.

Gluten free waffles

Gluten free breakfast waffles
My daughter's idea... but tasty. You can freeze for later use!






















"Gluten free breakfast waffles"


• 2 cups gluten free flour
• 1 Tablespoon sugar
• 1 Tablespoon baking powder
• 3 eggs, separated
• 2 cups milk
• 1/2 cup butter or margarine
• 1 teaspoon pure vanilla extract
• Maple syrup, golden syrup or fruit for serving



• Preheat your oven to 200 degrees.
• Combine the flour, sugar, and baking powder in a bowl.
• Beat the egg whites until stiff in a separate bowl or pot.
• Add the egg yolks, milk, butter and vanilla to the flour mix and whisk together.
• Gently fold the egg whites into the batter.
• Pour the batter into a silicon waffle mould. There should be enough batter for several moulds or several batches.
• Bake for 12 min or until golden.

Roasted Tomato and Avocado toast

Roasted Tomato and Avocado toast
I love this tomato! So tasty...




















"Roasted Tomato and Avocado toast"

- 8 plum tomatoes
- 2 tsp oil
- 1tsp brown sugar
- 1 tsp wine vinegar
- 1/2 tsp sweet paprika
- 2 tsp goat butter
- 1 big, ripe avocado
- juice from 1 lemon
Favorite bread to toast.


Preheat oven to 170stC. Slice the tomatoes in half and put on a tray with baking paper.
Mix oil, sugar, vinegar and paprika together. Pour the oil onto tomatoes and bake them for almost 1 hour.
In the meantime remove skin and stone from the avocado and mash the flesh roughly in a bowl with the lemon juice, salt and fresh pepper.
Chargrill the bread on a griddle pan then spread with the butter.
Divide the avocado between the toasts and top with the tomatoes.

Citrus salad with seeds
For an amazing morning or lazy afternoon...





















"Citrus salad with seeds"

- 1 big orange
- 1 red grapefruit
- 1 clementine
- pumpkin seeds
- 1 tbsp honey


Peel the orange, grapefruit and clementine. Remove the pith. Slice and arrange on a plate.
Tip pumpkin seeds on a hot pan and fry them for 1 min. Mix with a honey and heat together for a while.
Stir the remaining honey on a top of of the citrus salad.
